Jhoan Vergara is known for his work at Las Flores, a family-run farm in Huila, Colombia, which he operates alongside his brother, Diego. What characterises their coffees is their highly advanced approach to processing. What results is far beyond any flavour profile we have ever offered. It’s intensely aromatic and syrupy sweet, and delivers a distinctly expressive fruity cup. Jhoan Vergara brings this amplified cup profile through his processing techniques, which we have termed Profile Fermenting.
