Bakery Manager to lead Collective Bakery

As Bakery Manager, you'll hold the overall responsibility for both Production (BOH) and Front of House (FOH), ensuring consistently high quality, strong financial performance and an engaged team.

 

Working closely with the Head Baker and Front of House Manager, you'll lead the continued development of the bakery while helping shape one of the most important parts of the Coffee Collective experience.

 

You’ll take ownership of the bakery’s finances, planning and future development. At the same time, this is a hands-on leadership role for someone who enjoys being present in the daily operation and staying close to both the people and the production.

About Coffee Collective

 

Coffee Collective is a specialty coffee roastery with eight coffee shops and a bakery in Copenhagen. We work directly with producers to create exceptional coffee experiences while generating greater value through a transparent value chain. We have been B Corp certified since 2019.

 

Collective Bakery supplies all Coffee Collective’s Copenhagen coffee shops with bread and pastries while also welcoming guests directly at the bakery on Nørrebrogade 176. At Collective Bakery, we take the same curious and responsible approach to ingredients and craftsmanship as we do to coffee. We work with carefully selected producers and suppliers and are always looking for ways to improve our products, learn from the people around us and create new flavour experiences.

 

What you’ll be responsible for

 

Lead and develop the people around you

  • Lead, support and develop the Head Baker and Front of House Manager.
  • Recruit and onboard employees in collaboration with HR.
  • Support a culture where people take responsibility, share knowledge and help each other improve.

 

Create a reliable and healthy operation

  • Hold the overall responsibility for the daily operation of Production and Front of House.
  • Ensure reliable deliveries to Coffee Collective's coffee shops and wholesale customers.
  • Make sure staffing, scheduling and capacity support both quality and a healthy working rhythm.
  • Improve workflows, planning and collaboration across the bakery.
  • Ensure a safe and healthy working environment.

 

Build a strong bakery business

  • Own the bakery’s budget and financial performance.
  • Work closely with Finance on labour costs, product costs, margins and profitability.
  • Ensure consistently high product quality and develop our products and offering together with the Head Baker.
  • Work closely with Coffee Shop operations, Wholesale, Marketing, Finance and HR.
  • Strengthen the collaboration between the bakery and Coffee Collective's coffee shops.

 

We’re looking for someone who

 

We don’t expect your career to have followed one particular path, but you should have experience from a bakery environment. What matters most is that you understand what it takes to keep a busy operation running smoothly.

 

We imagine that you, ideally:

  • Have experience working in a bakery or bakery production environment.
  • Have leadership experience or are ready to take the next step into a broader leadership role.
  • Have experience overseeing daily operations, staffing and planning.
  • Enjoy developing people and creating an environment where others can take responsibility and grow.
  • Have strong operational and commercial understanding and are comfortable owning a budget and working with costs and financial results.
  • Are willing and able to work production shifts.
  • Can create structure, solve problems and identify ways to improve how we work.
  • Care deeply about quality and craftsmanship.
  • Speak English fluently. Danish is an advantage, but not a requirement.

You'll report directly to the CEO. You will work closely with two functional leaders and receive support from Finance, HR, Marketing, Wholesale and Coffee Shop operations.

Practical information

 

This is a full-time position primarily based at Collective Bakery on Nørrebrogade 176. Our headquarters on Godthåbsvej 34B in Frederiksberg will also be a regular workplace.

 

The role combines visible leadership in the day-to-day bakery operation with planning, meetings and office work. It is not a desk-only position.

 

The bakery operates seven days a week, and Production starts early in the morning. The role therefore requires some flexibility and presence outside normal office hours.
