This year’s Christmas coffee

is a washed Bourbon from producer Axel Palacios and his family farm Los Suspiros, located near Palmira in La Libertad, Huehuetenango. Axel is a fourth-generation coffee farmer and part of the Rosma Coffeelands project, which he runs together with his childhood friends, the Morales brothers.

The hallmark brightness and depth of Huehuetenango

After handpicking, the cherries are taken to Rosma’s processing station in Huehuetenango city, where they are depulped and fermented for 24 hours before being washed and dried on patios for 7 to 8 days. The result is a sweet and balanced cup with notes of nougat, cocoa nibs and plum.
