DayMade Kaffe Bar is a Copenhagen style coffee bar in Seattle’s Pioneer Square. Run by former Copenhagener Ashley Day, Daymade is serving carefully prepared coffee and espresso with a clear focus on quality and community.

What made you choose Coffee Collective as your coffee partner?

I feel incredibly fortunate to have worked at Coffee Collective from 2016–2019, and my decision to partner with them is rooted in that experience. During my time there, I saw firsthand how thoughtfully they treated their wholesale partners, their producers and farmers, and their own staff. 

The care, transparency, and level of training they invest in people at every stage of the supply chain is rare. Coffee Collective is deeply intentional about its presence in the world and conscious of the impact it has on those around it.

Supporting the economic stability of coffee farmers has always been important to me, and that shared ethos ultimately became a driving force behind my wholesale program.

  

How has our coffee or partnership impacted your business?

Based in Seattle, WA, many local cafés tend to follow a more classic model, dark interiors, developed roasts, and espresso-forward menus. Working with Coffee Collective allowed me to offer something different: delicate, complex filter coffees served in a bright, airy space, with a clear story behind each origin. This has helped set my café apart and has resonated deeply with customers. The loyalty and enthusiasm for Coffee Collective, in particular, has been a wonderful surprise. In the first few weeks after opening, multiple customers told me, “The last time I had Coffee Collective was four years ago, and I’ve been dreaming about having it in Seattle ever since.” One customer even came in carrying one of the original white Coffee Collective tote bags they bought in Copenhagen nearly a decade ago.

 

What do you value most about working with us?

The depth of knowledge and educational resources shared by the wholesale team allow me to speak confidently about each coffee and its origin. Supporting the long-term economic stability of coffee farmers was one of my primary reasons for choosing Coffee Collective, and that commitment continues to guide my program. I also deeply value Coffee Collective’s social media presence - it’s informative, thoughtful, and focused on farmers and customers rather than trends or clickbait, which feels very aligned with my own values.

 

Would you recommend Coffee Collective to others? Why?

Absolutely. While the cost may be slightly higher, I’ve seen significantly more excitement and loyalty from customers around Coffee Collective offerings than with other roasters I’ve worked with. People are eager for exceptional quality and for the opportunity to support a healthier, more sustainable coffee supply chain.
 

Do you have a story or moment with our coffee that stands out?

The Legesse coffee from late summer and fall was especially memorable for both my customers and me. One of my regulars, who lives on Vashon Island, takes the ferry over once a week just to restock on Coffee Collective beans. They were so taken by the white currant notes and tropical elegance of the Legesse that they emailed me afterward to order four additional bags simply to share with friends back on the island.
